Coconut impossible pie | This dessert is so simple to make. The end result has a bit of a crust at the bottom, creamy custard in the middle and a crunchy sweet coconut top.
• 4 eggs
• 1 cup caster sugar
• 2 teaspoons vanilla
• 125g butter, melted
• 2 cups milk
• ½ cup plain flour
• 1 cup coconut
• Zest of ½ lemon

1. Preheat oven to 180*C (160*C fan forced).
2. In the bowl of an electric mixer or using electric hand beaters, beat the eggs and sugar until they are pale and fluffy. Add the vanilla, butter, milk and mix. Stir through the flour, coconut and lemon zest.
3. Pour the mixture into a 16x26cm glass casserole dish and bake for 40 minutes or until golden on top and puffed up.
