Lamb Kofta

Julie Goodwin's Recipe - Lamb Kofta

Ingredients

1 small onion, finely diced
2 cloves garlic, crushed
1 tbs ground coriander seed
½ cup pine nuts, toasted and roughly chopped
¼ tsp ground chilli
750 g lamb mince (not too lean)
1 egg
Salt and ground black pepper to taste

Method

  1. Cook onion and garlic over moderate heat until translucent but not brown. Place into a large bowl. Stir through spices and pine nuts.
  2. Add lamb and egg. Spend a good few minutes working the ingredients into the lamb, kneading with your hands. It is important to massage the meat quite vigorously, until it is sticky. This is a bit messy but fun.
  3. Form small handfuls of the lamb onto soaked bamboo or metal skewers, or make into patties. Cook on a hot BBQ until cooked through. (Time will depend on the size of your kofta.)
  4. Serve the kofta with rice or flatbread, with lemon cheeks and fattoush salad.
