One of the loveliest things about summer is the abundance of fresh corn on the cob. This corn salad is cheap, versatile and delicious – fresh corn is one of my favourite veggies.
Ingredients
• 3 cobs corn, husks and silk removed
• 2 teaspoons olive oil
• 1 red capsicum, diced
• 1 red onion, finely diced
• ¼ savoy cabbage, very finely shredded
• leaves from 1/2 bunch coriander
• ¼ cup mayonnaise
• ¼ cup sweet chilli sauce
• juice from 1 lime
Method
1. Heat a BBQ or grill plate to high. Drizzle olive oil over the corn and cook, turning, until the kernels are tender. Some will blacken a bit, this is ok. Using a sharp knife remove the kernels. Toss in a bowl with capsicum, onion, cabbage and coriander leaves.
2. Combine the mayonnaise, sweet chilli sauce and lime juice and dress the salad a few minutes before serving.
